Remove the giblets and neck from the chicken and place it in your electric pressure cooker.
Salt the chicken thoroughly. (There’s almost no such thing as too much salt for this).
Add in your onion, garlic, carrot, bunch of parsley and thyme.
Add water to your instant pot’s max fill line.
Seal the top of your instant pot and set to cook on high pressure for 40 minutes.
Release the pressure manually, and carefully remove the chicken.
Strain out all of the solid ingredients.
