How to Cook Chicken Broth in an Instant Pot

This post is about how to cook chicken broth in your instant pot. It’s easy, and as a bonus, you’ll have an entire cooked chicken to do with as you please.

If you’ve never made homemade chicken broth, you’re missing out. I like to cook chicken broth at home when I have a recipe that calls for it. It accomplishes two things: you get a tasty homemade chicken stock out of it, and you get the added bonus of getting an entire cooked chicken to use for whatever you’d like. (Hello, freezer cooking!)

My favorite thing to do is to use it for chicken and dumplings. I use both the broth and the chicken for that recipe. I’ll be sharing it soon!

 

Here’s what you’ll need for easy instant pot chicken broth.

 

1 Whole Chicken

1 whole onion, cut in half

2 cloves of garlic, smashed

1 carrot, roughly chopped

1 bunch of parsley

3 tbsp course sea salt

1 tsp  ground thyme

 

  1. Water to cover, amount varies based on size of chicken and instant pot
  2. Remove the giblets and neck from the chicken and place it in your electric pressure cooker.
  3. Salt the chicken thoroughly. (There’s almost no such thing as too much salt for this). 
  4. Add in your onion, garlic, carrot, bunch of parsley and thyme.
  5. Add water to your instant pot’s max fill line.
  6. Seal the top of your instant pot and set to cook on high pressure for 40 minutes.
  7. After it’s done cooking, release the pressure manually. Being careful not to burn yourself, remove the chicken and set it to the side.
  8. Strain out all of the other added ingredients.

Oila! Chicken stock with the bonus of an entire cooked chicken. 

What to do with the whole chicken? Shred it up and add it to a casserole or freeze it for later. Season the skin and throw it under the broiler for a bit to crisp it up.  The possibilities are endless!
